CVF-50A-L is the 50 kg air-cooled model in the Vacuum-Fresh rapid cooling line. It loads 50 kg of hot food per batch and cools from 8090°C out-of-pot temperature down to 010°C in 15~25 minutes; vacuum chamber volume 0.4 m³, cooling capacity 15 kW, installed power 18 kW. In the model code, A indicates air-cooled condenser, L indicates low-temperature type.

Where it is used

Scenario Typical materials Description
Cooked food and braised product processing Braised beef, braised duck, roast chicken, pig trotters Goes directly into the chamber after cooking to rapidly pass through the temperature range where bacteria multiply actively
Central kitchen / group catering Braised pork, stewed dishes, side dishes 50 kg per batch, multiple batches per day, links up with the portioning process
Prepared dish production lines Seasoned meat pieces, toppings, soup dishes Shortens work-in-process time, reduces cooling wait occupancy
Bakery factories Toast, bread, mooncakes Baked goods have low moisture content (15~45%), less moisture loss, crust less prone to cracking
Meat and poultry processing Roast chicken, roast duck, sausage, ham Core and surface cool simultaneously, no cold-outside-hot-inside

How cooling works

Rapid cooling uses a two-stage process with two vacuum pumps dividing the work, not the same pump from start to finish.

Step Cooling range Working components Description
1. High-humidity stage rough pumping 90°C → approx. 50°C Water ring pump works alone Water ring pump withstands high temperature and high humidity, circulating water also serves as first-stage water capture
2. Low-temperature stage fine pumping Approx. 50°C → 0~10°C Rotary vane pump + water catcher Refrigeration system starts, water catcher condenses water vapor, rotary vane pump draws chamber pressure down to ≤600 Pa
3. Vacuum break and discharge Target temperature reached Shutdown and vacuum break After pressure restoration, open door and remove materials, proceed to next batch

The water catcher is a prerequisite for this process. Without it, water vapor would enter the rotary vane pump, emulsify the pump oil, and vacuum level cannot be maintained. Therefore all Vacuum-Fresh rapid coolers come standard with a refrigeration system, and the water catcher evaporation temperature is uniformly -10~-5°C.

Why choose it

  1. Two pumps each handle one stage. The water ring pump tackles the high-humidity stage from 90°C→50°C first, the rotary vane pump only does low-temperature fine pumping, pump oil is less prone to emulsification, oil change intervals and vacuum level stability are more controllable.
  2. Air-cooled, flexible site conditions. If the workshop has no cooling tower, unstable circulating water quality, or concerns about pipes freezing in winter, the machine can be installed directly.
  3. 50 kg per batch, suitable for multi-variety line changes. When rotating small batches of braised products, prepared dish toppings, or baked goods, there is no need to accumulate a full chamber before starting, production line rhythm is easier to schedule.
  4. Refrigeration system included as standard. The water catcher condenses water vapor at -10~-5°C, water vapor cannot reach the pumps, chamber pressure stays stable at ≤600 Pa, results are consistent between batches.

FAQ

How much can CVF-50A-L hold per batch, and how long does it take?

Batch load 50 kg, cycle time 15~25 minutes, including loading, vacuum pumping, cooling, and vacuum break discharge. Time depends on material thickness, moisture content, and target temperature; thicker materials and lower target temperatures push the time toward the upper limit.

What discharge temperature can be reached?

The low-temperature (L) type discharge temperature is 0~10°C, settable within the temperature control range. The rapid cooling stage only needs to bring temperature close to cold storage temperature; the remaining temperature difference is left to the cold storage to equalize naturally, with less moisture loss.

Can it be installed if the workshop has no cooling tower?

Yes. Model suffix A indicates air-cooled condenser, which dissipates heat via fans and does not require circulating cooling water. If the workshop already has a cooling tower and circulating water system, a water-cooled (W) model can be selected instead.

How are the vacuum pumps configured?

Water ring pump + rotary vane pump, two stages. The water ring pump withstands high temperature and high humidity, handling rough pumping from 90°C→50°C; the rotary vane pump performs fine pumping at the rear end of the water catcher, drawing chamber pressure down to ≤600 Pa. The two-stage pumps operate in parallel, each starting and stopping independently.

How to choose between this and CVF-100A-L?

CVF-100A-L has a batch load of 100 kg, vacuum chamber volume 0.7 m³, cycle time 2030 minutes, discharge temperature 08°C, cooling capacity 22 kW, installed power 25 kW. For daily throughput within 200 kg, choose CVF-50A-L; above that, move up to the 100 kg tier. For more capacity tiers, see the food vacuum cooler series page.
