Engineering Review — Vacuum Cooling & Freeze-Drying Selection

Before a quotation we run an engineering review — your product, batch, incoming and target temperature, calculated against your real conditions, then the right system and a proposal.

Why We Review the Process Before We Quote

Vacuum cooling is not a matter of buying a standard machine and plugging it in. The same unit runs at a different pace on leafy greens than on cooked food; a 500 kg batch and a 3 t batch call for different vacuum pumps, cooling capacity and chamber sizes. A high incoming temperature and a low target temperature stretch the cooling time, and the way you hold heat and control moisture loss has to change with them.

So our approach is: gather your working conditions first, run the cooling-time and heat-load calculation, confirm whether the system can reach your target temperature and roughly how long it will take — then size it and price it. That way the proposal is built around your product, not copied from a catalogue. A quotation that carries only a model number and a price, with nothing about the conditions, helps little in practice; what decides whether the machine works for you are exactly those parameters, written down.

What to Prepare Before the Review

The more specific the information, the more accurate the review. Provide what you can from the list below; if some items are not ready yet, that is fine — we can fill the gaps as we talk.

  • Product and category: fruit and vegetables (leafy greens, mushrooms, berries, flowers, etc.), cooked food and ready meals, bakery, or something else; loose product or in crates / on trays.
  • Batch or capacity: weight per batch (kg or t/batch), or throughput converted to an hourly or daily figure.
  • Incoming temperature: the actual temperature of the product as it enters the machine (℃).
  • Target core temperature: the temperature you want to reach (℃), and the cooling-time window you can accept.
  • Packaging form: bulk, crates, trays, or cooling with packaging on. This affects airflow and cooling speed.
  • Site and building conditions: available floor area, clear height, loading and unloading method (forklift, crates, conveyor), indoor or outdoor placement.
  • Power and cooling water: site voltage / frequency / phases, cooling-water temperature and flow, or whether air cooling is the only option on site.
  • Destination country and standards: where the machine will operate, the local voltage system, and any food, electrical or pressure standards that need to be met.

Our Review Process

  1. Requirement intake: fill in the conditions list above; drawings, product photos or details of existing equipment are welcome too.
  2. Cooling-time simulation: from your product, batch, incoming and target temperature, we calculate the cooling curve and the required heat load, and judge whether the target can be reached within a reasonable time.
  3. Sizing: on that basis we set chamber dimensions, vacuum pump set, cooling capacity, cold trap and control system — matching the right machine to each line (produce pre-cooling, food rapid cooling, freeze-drying).
  4. Proposal and quotation: a configuration list, lead time and price range, together with the assumptions and limits behind the proposal.
  5. Trial and verification: where needed, we run a trial with your own product to verify the cooling result before the final configuration is fixed.

How fast this moves depends on how complete your information is and whether an on-site trial is required.

Three product lines today: produce vacuum pre-cooler (CVF series), food vacuum rapid cooler (CVF series) and vacuum freeze dryer (CVD series). Each line is reviewed with a different focus — pre-cooling on field heat and moisture loss, rapid cooling on the temperature band of cooked food and hygiene requirements, freeze-drying on the eutectic point and the sublimation curve.
