CVF-300W-L is the 300 kg water-cooled model in the Vacuum-Fresh rapid cooling line. It loads 300 kg of hot food per batch and cools from a 8090℃ out-of-pot temperature down to 08℃ in 25~35 minutes; the vacuum chamber volume is 3.2 m³, the cooling capacity is 60 kW, and the installed power is 55 kW. In the model code, W indicates a water-cooled condenser and L indicates the low-temperature type.

How cooling works
Rapid cooling uses two stages, with two vacuum pumps dividing the work; the same pump is not used from start to finish.

The water catcher is a prerequisite for this process. Without it, water vapor would enter the rotary vane pump, the pump oil would emulsify, and the vacuum level could not be maintained. Therefore all Vacuum-Fresh rapid coolers are equipped with a refrigeration system as standard, and the water catcher evaporation temperature is uniformly -10~-5℃.

Why choose it
- The two pumps each handle one stage. The water ring pump first handles the high-humidity stage from 90℃ to 50℃, and the rotary vane pump only performs low-temperature fine pumping, so the pump oil is less likely to emulsify, and the oil change interval and vacuum stability are more controllable.
- 3.2 m³ chamber, 300 kg per chamber. The main tier for medium-sized cooked food plants and central kitchens; chambers can be opened continuously in a single shift, with no waiting for cooling from out-of-pot to warehousing.

How much can CVF-300W-L hold per batch, and how long does it take?
The batch load is 300 kg, and the cycle time is 25~35 minutes, including loading, vacuum pumping, cooling and vacuum breaking for discharge. The time depends on material thickness, moisture content and target temperature; braised products with broth have greater evaporation, so the time will be closer to the upper limit.
What discharge temperature can be reached?
The discharge temperature of the low-temperature (L) type is 0~8℃, settable within the temperature control range. If there is a subsequent cold chain portioning process, the endpoint can be set near 8℃, and the remaining temperature difference can be balanced by the cold storage.
What needs to be provided on site for the water-cooled model?
The site needs to provide circulating cooling water and a cooling tower; the cooling water flow rate is configured according to order requirements, and the inlet water temperature is recommended to be controlled within 32℃; in addition, a three-phase power supply and clean, dry compressed air are required for the pneumatic door and valves. Specific pipe diameters, flow rates and pressures are confirmed item by item during the solution stage.
How are the vacuum pump and water catcher matched?
The vacuum side is two-stage: water ring pump + rotary vane pump. The water ring pump withstands high temperature and high humidity and handles rough pumping from 90℃ to 50℃; the Leybold SV300B rotary vane pump performs fine pumping downstream of the water catcher, drawing the chamber pressure down to ≤600 Pa. The water catcher evaporation temperature is -10~-5℃; it first condenses water vapor, and then the refrigerant carries the heat out of the chamber.
