Vacuum System Components

A well-designed vacuum cooling system consists of three main components: (1) the vacuum chamber, (2) the vacuum pump system, and (3) the water catcher (condenser).

Vacuum Pump Selection

The pump must be sized to evacuate the chamber volume plus handle the continuous water vapor load during cooling. For produce cooling (≤660 Pa), single-stage rotary vane pumps are sufficient. For food cooling (80-90°C initial temperature), a two-stage system with a water ring pump backing a rotary vane pump is recommended.

Water Catcher Design

The water catcher must have sufficient surface area to condense the evaporated water vapor. The required area depends on the maximum moisture removal rate. A rule of thumb is 1 m² of catcher surface per 100 kg of water vapor per hour.
